I think he's hired the right people as vp's and product managers and designers who are actually the ones responsible for the great things coming out of apple. I believe that the culture he has set up at that company will live on without him. but yes, that's a leap of faith you'd have to make. that may be a valid point, however in an organization the size of apple I have a hard time believing steve jobs can be in so many places at one time.
